The Sémillon grape thrives in the Sauternes and Barsac regions. Its dominance (70-80%) over the Sauvignon blanc, is borne out of its susceptibility to noble rot (Botrytis Cinerea).
The topography of Barsac is flatter than in Sauternes and many properties in Barsac enclose their vineyards with stone walls. These two factors may or may not have an influence on terroir but Barsac wine has the elusive reputation to show more viscosity and taste a trifle sweeter.
Sauternes and Barsac are golden, honeyed, unctuous wines and project delicate aromas of hazelnut, confected orange peel and delicious exotic flavours that get more complex with age. Traditionally served with foie gras and desserts, they also taste great with blue cheese, especially roquefort types.
